Tsam-Pha ( Tsampa )

Tsampa: It's made from roasted barley flour. The barley is first roasted until it turns a golden - brown color and develops a nutty flavor. Then it's ground into a fine flour. Tibetans often mix tsampa with butter tea. They take a small amount of tsampa in a bowl, pour in warm butter tea, and then use their fingers to knead it into a dough - like consistency.Tsampa is a very important part of the Tibetan diet. It's a convenient food, especially suitable for the high - altitude environment.
